Ac Flash Study has been performed but client does not want to install on equipment that gets washed down with water every day.
He is afraid labels may hold onto contamination and cause processing problems.
I suggested he make up stainless steel tags on equipment that reference the arc flash label ,that is located in a non process secure and dry location.
Any thoughts?

Can't help you with the labels, but PPE might also be a problem in food processing. The issue I've run into is hairnets which are usually made of polypropylene, a fabric that is specifically disallowed by NFPA 70E 130.7(C)(11).
Because you can't work around food safety regulation if the switchgear is inside the plant (and it sounds like it is) hairnets should be arc rated as well. On the upside, these are available!
